Sunday Morning Brunch: Gingerbread Pancakes Recipe

For some, Saturday is the best day of the week. I agree, there is a nice feeling that comes along with waking up in the morning to forty-eight uninterrupted hours of work-free down time. Though Saturdays certainly have perks (namely: Saturday nights), I'm more of a Sunday girl.

Among its best qualities, Sunday has sleeping in, eating a late brunch, and comfy clothes. So last Sunday when I saw this recipe for Gingerbread pancakes, I knew I had to try it before December ended.

Gingerbread Pancakes

Ingredients:

1 1/2 cups all-purpose flour

1 tbsp baking powder

1 tsp ground ginger

1 tsp ground cinnamon

1/4 teaspoon ground cloves

1/4 tsp ground nutmeg

1/4 tsp salt

1 1/4 cups milk

1 egg

1/4 cup dark molasses

2 tbsp canola oil

Directions:

1. In a large bowl, mix the flour, baking powder and spices. Set aside. In a second bowl, whisk together milk, egg, molasses, salt and canola oil. Pour the dry ingredients into the wet ones and mix to combine.

2. Heat a lightly oiled frying pan over medium high heat. Pour the batter onto the griddle in 1/4 cups, and cook for about 2-3 min per side.

Makes about 6 large pancakes.

I love anything that combines two delicious foods into one package. It’s the best of both worlds, with less clean up required. I’ll have to make these next weekend, or maybe even for dinner this week!

the favorite part of my weekend is swimming and splashing with my kids and husband at the pool (indoor of course) and taking walks outside on the nyc streets to people watch.

I’m both Saturday and Sunday person. I just love week-end, getting up early, making my favorite breakfast, eat at the couch. Just being lazy and not to worry about anything else, that’s my favorite part. Unfortunately, that’s not always happen like that, though!
This gingerbread pancake sounds like a perfect christmas breakfast.
I can imagine my house will smell heavenly in the morning when I make it. Hmmm, Delicious!

Those look amazing!
Guess what – you will be so proud of me – I made brownies this weekend. A friend told me about a Hungry Girl recipe and when she explained there was only three ingredients, I felt like I could do it.
Ready? Brownie mix, a can of pumpkin puree and then low fat peanut butter swirled throughout (I used nutella because I had it and let’s face it, it’s nutella). You cook that for 35 minutes on 350 and then chill it in the fridge for two hours.
66 calories in each, and every one was delicious!

I made pumpkin pancakes at Halloween and they were a hit with the kids. Do you think kids would like these pancakes. They sound wonderful!

My favourite part of the weekend is feeling like I’m accomplishing even more and being ultra-productive when I work (at home) on a Sunday. How lame is that?
These pancakes look delish – I make similar ones using pumpkin puree as well – pumpkin gingerbread pancakes!

First of all…I love love love anything gingerbread. Mmm, gingerbread pancakes are so great (and pumpkin ones). And those brownies looks amazing. Two sticks of “butta” (as Paula Deen would say), that’s pretty impressive.
