Easy Recipe for Entertaining: Buffalo Chicken Dip

I’m not a huge sports fan but I admit that the scene in Chicago has been pretty exciting lately if you’re into that kind of thing. And even though I admittedly could care less about the tenacious pursuit of a puck, ball, base or net it’s hard not to enjoy watching grown men jumping around like twelve year old little league-ers celebrating victory to the tune of Kanye West.

Between the bars filled with World Cup aficionados and Blackhawks fans roaming the streets (literally) it’s been hard not feel just as psyched as the rest of the city when game day rolls around.

But staying true to myself, I don’t look forward to the thrill of the competition or anxiety over who will win or lose. I look forward to the snacks (and occasionally the adult beverages that accompany the snacks) that make every game a winner.

A few Sundays ago I had a few friends for dinner and even though we weren’t watching sports, we noshed on this while I finished cooking the rest of the meal.

Buffalo Chicken Dip

What you need:

1 (8-ounce) package cream cheese, softened
1/2 cup blue-cheese salad dressing
1/2 cup sour cream
1/2 cup buffalo wing sauce
1/2 cup crumbled blue cheese
2 cups shredded, cooked chicken (I used about 1 1lb. boiled chicken breasts)

What you do:

1. Preheat oven to 350°.

2. In a bowl, add cream cheese. Whisk in salad dressing, wing sauce and cheese until smooth. Stir in chicken.

3. Transfer to a heatproof container, and bake in oven for 20 minutes or until mixture is heated through. Stir well.

4. Serve with crackers or cut-up vegetables. For a party buffet table, keep this dip hot in a small crock pot or fondue pot.

What’s in buffalo wing sauce? Is it just a mild hot sauce?

A friend made this (or a similar recipe) for a dinner party a while back, and while I wasn’t sure that it sounded good at first, it was a big hit. I’m pretty easy to please when it comes to anything involving buffalo sauce though! It was delicious on celery, if you want to try something different next time.

My cousin made a buffalo chicken dip for the Fourth of July last year and I have to say, I wasn’t in love. But I think it was her version (there was no blue cheese and it was covered in cheddar), because I am really passionate about buffalo chicken. I think I’m going to have to bring this to our annual party this year. Show em how it’s really done!

My recipe uses Frank’s Red Hot Sauce, but is essentially the same. Everyone loves it and wants the recipe as soon as they taste it. My son and his friends put it on pizza. I took it to a party my friend had for her mother and the venerable ladies of the bridge club and I thought they might come to blows crowding around the bowl. It was amazing! I serve it with Wheat Thins and celery, just to make people feel better about how much they are eating! LOL This recipe is a surprising “keeper” in my files.
