Strawberry Cheesecake Mousse

by Maris Callahan on April 1, 2011

There are two desserts that I simply can’t have in my house: chocolate chip cookies and brownies. I’ve learned how to control myself around ice cream (it’s taken years of practice but I’m almost there) but around certain baked goods, there is just no trusting me.

So when I need to make desserts for parties or events, I like desserts that are unique, yet simple. And with the warmer weather on the horizon, they should be light, simple and ideally, require as little baking as possible..

Strawberry Cheesecake Mousse
Recipe & Photo: The Alchemist
makes 4 servings

8 oz (224 g.) package cream cheese
10 oz. – 2 cups, ( 283 g.) fresh strawberries, stems removed, washed and sliced
1/2 cup (125 ml) 4 oz. heavy cream
1/2 cup (55g.) powdered sugar
1 tsp vanilla

more sweetened whipped cream for topping, if desired
more fresh strawberries for topping, if desired

Place cream cheese, fresh strawberries, vanilla and powdered sugar in a food processor or blender. Puree them together until smooth. Then place the cream cheese mixture in a large bowl.

Whip the heavy cream just until stiff peaks form. Fold the whipped cream into the cream cheese mixture.

Spoon the mousse into individual bowls, glasses or cups. Refrigerate a few hours before serving. Top the individual servings with sweetened whipped cream and a fresh strawberry.
