Frozen Strawberry Daiquiri

There are some things that I really only do when I’m on vacation, like read for pleasure with no guilt, drink wine with lunch or eat French fries (okay, well sometimes I do that when I’m not on vacation but let’s not get into semantics here).

Another item for the “only-on-vacation” list is drink strawberry daiquiris. I’m pretty sure the last time I had a daiquiri was on spring break, many many many years ago when my friends and I would conclude each beach day with something frosty and alcoholic.

Frozen daiquiris are probably a vacation treat because it can be a hassle to haul out the blender every time you’re craving something smooth and spiked. Isn’t it easier just to go to the bar?

Well, if you happen to have strawberries in your freezer from an excessive farmer’s market shopping spree, a great way to use them is to make your own blender beverage that will transport you to vacation-land, even if only in your fantasies.

For full disclosure, I did drink one of these while on vacation after day of beach. I assure you, yours will taste as good as mine did after a day of this:

The recipe below is an honest approximation of what my cousins and I whipped up in the blender this past weekend. I am fairly certain that the recipe pictured below contained a more generous serving of rum than I would recommend to you, but feel free to start with 1 cup and if you have nowhere to drive, adjust accordingly.

Frozen Strawberry Daiquiri

What You Need:

3/4 cup pureed sweetened frozen strawberries
1/2 cup crushed ice
1 cup white rum [I wouldn't recommend using dark or spiced rum for this recipe although I certainly wouldn't begrudge you to experiment]
4 teaspoons sugar
1/2 cup fresh lime juice

How-To:

1.  Puree strawberries in a blender until they reach a smooth consistency. They might also be a little frothy, which is fine. Add the rum, sugar and lime juice. Add crushed ice to the top of the blender leaving about 1 1/2 inches of room. Blend until liquefied.

2. Pour into the glasses and garnish each glass with a cocktail umbrella, if desired.  Makes 4 cocktails.

Wow, you only read for pleasure without guilt while on vacation? I would lose my mind if I didn’t read for pleasure daily!! And reading for pleasure with a Strawberry Daiquiri in hand…bliss ;) This sounds awesome, I love frozen drinks in the hot weather!

Oh yum. I have a sore throat so that looks really good right about now. Even though it’s 8:15 am…. ;) My mom makes daiquris in the summer at our lake cabin and they are THE BEST because she always throws fresh fruit in. My fave are the peach ones she makes! So good and so refreshing after a day in the sun!

Strawberry daiquiris is actually my type of drinks. I’m very light in terms of alcohol (I think I’m allergic) but I truly enjoy Strawberry daiquiris. So sweet and “easy to drink”. My husband who loves any alcohols always make fun of me by my definition of “easy to drink”. Great post and I’m keeping this recipe for me. ;-)

Sometimes, you’ve just gotta have a cocktail…..and this one looks like a keeper! (I’m instigating “cocktail Sunday” now that its summer and we can sit outside!
