Lemon Cake Pops Recipe + Babycakes Cake Pop Maker Giveaway

Last week I posted a guest post from my mother that featured a really awesome cheesecake recipe as well as some memories of her late brother, who I unfortunately never had the chance to meet. Because she was so grateful for and touched by your comments, she insisted that we thank you with a giveaway. I was happy to oblige her since I, too, love reading your comments and thoughts on my posts each and every day (plus, you have to listen to your mom, right?).

With gratitude in mind we decided that the giveaway needed to be fun. Festive. Cake pops are fun. Cake pops are festive. So while I have some great giveaways coming up for you with the rest of the Ten First Kitchen Commandments series,  this is a special treat.

We are giving you a treat that will let you make treats.  We’re giving one reader a Babycakes Cake Pop Maker to help you bring the cake pops trend into your own kitchen. The method is slightly different than the original recipes found around the internet, but there is no denying that they’re equally adorable. And delicious.

Not only does this particular cake pop maker let you bake a dozen cake pops at at a time, but you can make donut holes, which could never be a bad thing. The cake pop maker reminds me of the miniature George Foreman grill I had in college – easy to use, small enough to store and equipped with power and ready lights, a wrap cord and a latching handle.

Giveaway: One reader will be selected using random.org to receive one Babycakes Cake Pop Maker (pictured above, ARV: $25). The cake pop maker comes complete with all the accessories you need to bake and decorate cake pops or donut holes, including a supply of cake pop sticks.

Lemon Cake Pops

Recipe: The BabyCakes Shop

Ingredients:

1/2 cup butter
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup plus 2 tablespoons sugar
2 eggs
Grated zest of 1 lemon
2 teaspoons lemon juice
1/2 teaspoon vanilla
1/4 teaspoon lemon extract

Directions:

Melt butter and set aside to cool briefly. In a small bowl, whisk together flour, baking powder and salt; set aside.In a large mixing bowl, using an electric mixer at medium high speed, beat together sugar, eggs, lemon zest, and lemon juice 1 minute. Add melted butter and beat 2 minutes at medium-high speed. Beat in vanilla and lemon extract. Add flour mixture and beat just until blended. Fill each well with about 1 tablespoon batter and cook 4 to 5 minutes or until toothpick inserted in center comes out clean.  Cool and glaze or coat, as desired. Makes approximately 2 1/2 dozen.

I’d love to see more casserole recipes- Rob and I love to make these for work-night dinners because they’re fast and we have leftovers for the next day’s lunch. One of us is usually wrangling the baby while the other is furiously cooking dinner in the kitchen… But I’d also love to see homemade pizza recipes! I’m dying to get a stone and start on my own homemade dough. I’d love to make my own Hawaiian pizza!

Ahh! This giveaway makes me so excited, not only because I love cake pops (which I do), but because my sister just gave me Bakerella’s cake pops book for my birthday and this would be the icing on the cake (haaa, pun intended).

I’d love to see budget-friendly suggestions for those of us who are pinching pennies when we go to the grocery store. There are certain ingredients or items I can only afford in my dreams!

Hi Maris! You are so generous! I’ll be joining your giveaway entry. What I want to see here. I want to know how to make meringue properly and also icing for cupcakes…. hopefully detail enough for beginners. I’d like to see healthy slow cooker recipes. There are a ton of slow cooker recipes out there, but it seems like most of them aren’t very health conscious. Using a crock-pot has so many benefits because you can put all the ingredients inside before you go to work and have a meal waiting for you at the end of the day.

as for the tip i’d like to see, how do you get the chocolate on cake pops without making a huge mess? haha. or cake balls i should say, i’ve made cake balls and the chocolate is always a very messy process? any tips to make it less messy?

I don’t think I would find a cake pop maker useful UNLESS I could find skewers long enough to skewer all twelve of the li’l guys onto a tasty branch of goodness just for myself. Then, yum. Useful.

I gave away a grotty old doughnut maker from Goodwill to someone as a joke Christmas gift. I bet she could be working on making her first million now:)

I’m always looking for recipes or instructions on what to do with proteins. I get anxious when cooking meat for some reason. I’m a super confident baker, but the thought of making a roast paralyzes me. Maybe you’re a vegetarian and you hate this idea? If so, ignore.

Your mom’s entry about her brother was so beautiful – it was a pleasure to read it. I need to remember to lead the kind of life that will lead to a remembrance like that. It is super sweet of your mom to offer this giveaway after sharing such a touching post. As to the cake pop maker, I am intrigued by the donut hole option. I have seen several catalogs offering different products in which one can bake donuts. I would love it if you could come up with a baked donut – or donut hole recipe- that doesn’t taste “diet”.

What a brilliant little contraption!

I would love to see more creative avocado recipes like the one you just posted making a pasta sauce. Avocados are a great source of healthy fat and there are probably so many more things their delicious creamy texture could be put to use for that we haven’t thought of… like the pasta dish for one!

Just thought of another thing I would love to see here- a mango salsa! It’s mango season in Florida and my boyfriend’s tree is raining so many mango’s we don’t know what to do with all of it! Okay, now I am in love. Didn’t even know there was such a thing! I must have this now! I would love to hear you talk more about cooking with plantains. I think they are super yummy and i don’t really cook with them that much but would love some ideas.

OHMYGOSH! I think this just might be one of the best giveaways ever. I am obsessed with cake pops and usually make them by hand. Now if I win this I can make them all the time and eat cake pops for breakfast, lunch, and dinner. ;-)

One thing I’d like to see you write about is how you get your recipe ideas. I did a post about my inspiration a while ago and everyone seemed to enjoy it. Plus, I love it when bloggers get a little more personal.

what is one [or more than one!] recipe or cooking technique you’d love to see written here on In Good Taste?

I would love to see a recipe for a great summer salad I could take to the lake, camping or on a picnic at the park. Something that would keep unlike salads with things such as mayonnaise. Always worried about macaroni salad and potato salad spoiling.

So excited about this cake pop giveaway!

I would love to see more “cook ahead” type recipes where you cook once for 2 or 3 meals. I’d like large casserole recipes that can be divided and frozen, or even recipes where you cook the meat for several recipes at once and use it throughout the week in different dishes. My tip: clean as you go! making a cake? wash that bowl and beaters while the cake is baking or wipe down the counter. this way, when the cake is done, the kitchen will still be clean.

When I make cakes in round pans or rectangular pans I always seem to have a middle rise higher than the ends and most of the time crack. I would love to if there is a technique to show how to avoid having the middle of you cake rise so much. Thank you.

id love to see some spinach receipes.. i LOVE spinach but the only thing i really can make with it is stuffed manicotti. and also i like the 2day meals, where ingredients make two diff meals. im horrible at meal planning!! thanks for caring what us readers think! your awesome!

Im so glad I found this site! I’ve tried making cake pops, they aren’t coming out right!! I would love to try the cake pop maker! What I am looking for more of is fun treats for kids with NO sugar or CORN products. We are trying to get Corn and Sugar out of our house :) but still want fun sweet treats!

I would love to see recipes, tricks and tips on making fruit preserves. It seems that there is a very fine line between properly jelled and liquid. What is the temperature translation for oven baked cake pops?
