Seven Layer Magic Bars

by Maris Callahan on June 23, 2011

I have a shelf in one of my kitchen cabinets devoted entirely to baking supplies. It’s a large shelf, big enough to accommodate multiple bags of flour, four or five kinds of sugar at any given time, chocolate chips, cocoa powder, chopped walnuts, sliced almonds, several types of oatmeal…you get the picture. It’s crowded in there.

This weekend I went on a little cleaning spree and wanted to get rid of a few almost-expired ingredients: graham cracker crumbs and coconut, to name two. I went digging in my grandmother’s recipe box and emerged with a recipe for “Magic Bars” that called for most of the ingredients in my cabinet and since it was written in her shorthand that I am fairly certain even she wouldn’t be able to decipher today if she were still here, I was able to do a good bit of improvising.

I would like to tell you that these are called magic bars because they’re “magically delicious” or some other charming family tale about the recipe’s origin. I’m pretty sure they’re called magic bars because if you forget to grease the bottom of the pan like I did, it’s going to take some magic to dislodge the bars from their cooking vessel once they’ve cooled.

Seven Layer Magic Bars

What You Need:

1/4 cup (4 tablespoons) butter, melted
1 cup graham cracker crumbs
1 cup shredded coconut
3/4 cup chocolate chips
3/4 cup peanut butter chips
1 cup sweetened condensed milk
1/4 cup chopped walnuts

How-To:

Preheat the oven to 350 degrees F. Grease an 8×8 baking pan with butter or cooking spray. In a small bowl, combine melted butter with graham cracker crumbs and press onto bottom of pan to form a crust.

Spread shredded coconut on top of graham cracker crust and layer with chocolate and peanut butter chips. Pour condensed milk over top and sprinkle with chopped walnuts.

Bake for approximately 25-30 minutes. When you remove from the oven, the mixture will still appear underbaked (milk layer will look as though it hasn’t set). Place the bars in the refrigerator for 30 minutes up to an hour and remove them to cut. Serve in an airtight container in a cool, dry place for up to three days (but my guess is that they won’t last that long).

Makes 12-16 bars (you might want to cut them into smaller pieces because they’re so sweet).

ha ha ha, they do sound like they’d be killers in that pan if you forget, tee hee. These sound make a good contribution to our holiday treat platters. :)

My college roommates and I were OBSESSED with these. So easy to make, and you can switch out the ingredients for practically anything in your cabinet–we occasionally had varieties with pecans, chocolate chunks, butterscotch chips, mini marshmallows…the list goes on. :)

These are probably my husband’s all time favorite sweet, besides chocolate chip cookies. Always a good choice in our house :)

Can I say that your bars look gorgeous? I hope I’m not out of line. I guess good things are worth the elbow grease to unlodge them…

Oh, how you make me feel better by admitting a mistake. :) Now I know even really good cooks mess up every now and then. Those bars still look pretty magical, though!

I’ve been wanting to make magic bars for a while, but haven’t gotten around to it. What a perfect way to use up ingredients in the pantry and de-clutter! I sure wouldn’t mind having these treats laying around my apartment. :)

Your grandma must be really happy! You made your grandma’s recipe alive. :-) Oh yes, I can tell this is magically delicious! My pantry has very small portion of baking supplies. LOL. One day I hope it will get bigger and bigger!

This is my favorite dessert EVER! We made these all the time when I was a kid. We always used butterscotch chips and pecans instead of the pb chips and walnuts, but I’d love to try that variation!

My recipe differs slightly but i know why they’re called “Magic Cookie Bars”. In the recipe I have from my grandmother, you melt the butter in the baking pan, then layer on the rest of the ingredients. They are “magic” because there is no stirring and they are a single-pan dessert.

That’s what I call a fun spring cleaning project. They look great. We have all our sweet stuff for baking in one cabinet too, maybe it’s time to do some cleaning of our own.

Magic indeed! You are like a houdini! These look incredible, rich, decadent and they are screaming my name to try them. Okay, I will take a dozen please!

Barbara June 24, 2011 at 7:09 am

Dangerous recipe, Maris, and I don’t mean the sticking in an ungreased pan, either.
(Didn’t the refrigeration make things easier?)
I bet this is like candy…one bite is not enough.

Joanne June 24, 2011 at 7:30 am

That sounds like one dangerous shelf to have around. I can’t keep chips of any kind sitting here otherwise I grab a handful every time I pass them.

Awesome bars though! Totally worth buying peanut butter chips for.

Oh you brought back some good memories with these bars! When I was growing up my one aunt made these all the time! They were always included on her cookie tray! Being Italian these really stood out as they were so sweet and different from all the typical Italian cookies all the other aunts and my mother would make. I always think of her when I see them. I really don’t know why I just don’t make them myself… and now I have the recipe!!

Wow, these bars definitely bring back fond memories. Magic bars were among one of my first culinary feats as a kid. My 3 older brothers would go wild when I made them and I felt like a total rockstar when they would ooh and ahh over them. Yours look delicious and decadent!

I really love this simple version of magic bars! I too have an over-crowded shelf (or maybe 2 shelves…) full of baking supplies. I don’t think I have any peanut butter chips though. I’ll have to buy some on my next trip to the store.
