Crispy Pecan Cookies & Cook for the Cure KitchenAid Mixer Giveaway

Three of my favorite things in the world are cookies, dinner parties and kitchen appliances…and not in that order. I especially love it when all three things merge: using kitchen appliances to bake cookies for a dinner party.

Recently I was contacted by Del Webb, a home building company that has partnered with KitchenAid to encourage philanthropy and community this summer with 1,000 Cooks for the Cure,  which challenges America to host 1,000 dinner parties to raise money for breast cancer research and community outreach programs.

The annual event has raised nearly $8 million since 2001 for Susan G. Komen for the Cure. I’m all about supporting good causes and this one is no different.

Giveaway:

To help you do more baking for dinner parties (everybody does that, right?) and to support the 1,000 Cooks for a Cure program, I’m giving away your choice of one KitchenAid Seven Speed Hand Mixer ($79.99) OR one KitchenAid 5-Speed Artisan Series Blender ($129.99).

Crispy Pecan Cookies

What You Need:

2 cups (8-ounces) chopped pecans
2 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter
2/3 cup granulated sugar
2/3 cup packed brown sugar
1 egg
2 teaspoons vanilla extract

How-To:

Preheat the oven to 375°F.

Prepare the pecans: Place the pecan pieces on a baking sheet and toast them for 8-10 minutes, tossing them every 2 minutes to make sure they aren’t burning (this can happen rather quickly).Once the nuts have cooled, put 3/4 cup of them into the bowl of a food processor and pulse until pecans are just ground – the mixture should be a little thicker than sand.

Place the chopped and ground pecans into a large bowl and add the flour, salt and baking soda. In another bowl, or in the bowl of a stand mixer, cream the butter and sugars until light and fluffy. Add the egg, then the vanilla extract and beat until all items are well combined, like frosting.

Add the dry ingredients into the wet ingredients and stir until just combined. Form the dough into 2-inch balls, and roll the balls in the sugar-salt mixture until coated. Place the balls on a baking sheet 3 inches apart.

Bake the cookies for 8-10 minutes, until they appear golden brown. Let cool on the baking sheet for 10 minutes before removing. Makes 24-30 cookies, depending on how large you roll them.

Hi Maris, great looking cookies! If I got a new blender, I’d make smoothies with it (followed closely by a cocktail – just to test the ice crushing setting of course! :) ), and if I got a new mixer, I’d make some cupcakes. My hand mixer is a cheapie on it’s last leg and this KA one is awesome! The first thing I’d make would probably be my brother’s wedding cake. He asked, and I can’t say no…especially to family, so come August, I’ll be making my first 3 tiered fondant covered cake! Yum!

Look at your with the great giveaways! I would choose the handmixer and I would probably make this apple dip for my co-workers. It’s so simple, but so easy – cream cheese, brown sugar, and vanilla. Mmmm… So so good. Granted, I don’t eat cream cheese anymore, so I would have to make it and then not eat… unless I used Tofutti cream cheese and I don’t know if I could get away with that substitution as I fear my co-workers would def taste the difference!

A wonderful cause, Maris! And a super giveaway. My hand mixer is so old half the time it doesn’t work. I love having one because it’s easier for making cookies than hauling out the big Kitchen Aid mixer. So I’d use it quite a bit. Easy to store too.

I love dinner parties too, but my apartment is so small… any chance you are giving away apartment renovations as well?

I’m pretty happy with my sketchy hand mixer that lights up green inside when it’s working too hard, but I’m not so happy with my ghetto blender that I adopted several years ago. It’s sad. I bet I could blend up my old blender in this new one. Or I could make a nice rhubarb slush. Perfect for the hot heat of the afternoon!

I love the pink kitchen gadgets! Your pecan cookies look delicious. I haven’t had cookies like this for a long time. Make me crave for them right now. I don’t even bake cookies…. this has to be changed this year! Well I can’t have any more gadgets in my kitchen and I’m fan of yours everywhere, so I hope someone will win this giveaway! :-)

Awesome cause! Pecan sandies are one of my faves. If I won, I’d want the blender and the first thing I’d make is a mango lassi!! Yum!

The first thing I would make with the hand mixer would be one a yummy chocolate mousse. My old Hamilton Beach hand mixer (circa 1970s) belongs in the Smithsonian!!!

My blender broke yesterday! With all the fresh fruit available this time of the year, my husband makes the most wonderful smoothies every morning for breakfast. We went w/o this am and will do so again tomorrow, because work is getting in the way of a new blender purchase. Such sad faces on our children! We need smoothies in the morning with the record heat wave hitting the midwest! Also, love the pink blender. I helped start the Komen organization locally, and am proud of each any every opportunity to enhance awareness for breast cancer research.
