Weekend Brunch for One or Two: Zucchini Omelet

I wish I had a garden, it would be so lovely.

Here’s what I do have though: Two beautiful, large garden pots, one in front and one in back of my townhouse, in which I planted hosta bulbs, only to later discover holes in the dirt instead of small green baby hosta shoots. Apparently squirrels love bulbs, or so my friend said, as we watched one of those squirrels boldly stare at us as he sat in the dirt of my beautiful garden pot, hunched over his prized possession.

So I don’t plant vegetables. I can’t plant vegetables. Well, I could if I wanted to be angry at God’s creatures all the time.

I envy all the people who get to go out and pick something from their garden to throw into a salad for dinner. I’m happy for them, but a little jealous nonetheless. So I resort to farmer’s markets and Whole Foods, both of which are great, but cost money. And aren’t in my backyard.

If I had a garden, I imagine one of things I’d grow would be zucchini. I grew up eating it from our family garden, and now every once in awhile I’m lucky enough to score some from my parent’s still thriving garden. I always default to either frying it up with butter or broiling it, and never really think about any other zucchini-making options.

Then one day my husband threw it into an omelet, which I thought was kind of strange at first. After I shut my skeptical mouth long enough to take a bite, I was proven wrong. It added such a wonderful texture-not too soft and not too crunchy, and it gave the omelet a nice rustic flavor. So nice, in fact, that I made it again the next week.

Zucchini Omelet for One or Two

What You Need:

If you’re making this omelet for one person, use the smaller ingredient quantity. If you’re making it for two, use the larger measurement provided.

1-2 eggs (depending whether you’re cooking for one or two)
1-2 tablespoons diced zucchini
1-2 tablespoon diced onion
1-2 tablespoons diced tomato
1-2 tablespoons fresh grated parmesan cheese or other cheese of your choice (I’ve used Gruyere)
1/2 link fully-cooked Italian sausage, chopped (optional)
1-2 teaspoon butter or olive oil
Splash of milk
Salt and pepper, to taste

How-To:

Whisk the egg(s) with a splash of milk in a small bowl. Set aside.

Add butter or olive oil to a skillet or sauté pan over medium-high heat. When the oil is heated, add zucchini and onion and cook for about a minute. Add the tomato, along with a dash of salt and pepper and cook for another 30 seconds or so until tomatoes begin to wilt and release juices. Stir gently, evenly spreading the ingredients in a layer on the bottom of the pan.

Pour the beaten egg(s) over the ingredients in the pan. Gently swirl the eggs around in the pan until the bottom is as evenly coated as possible. Sprinkle on a little more salt and pepper, according to taste. As the egg mixture becomes firm, fold the edges over the top of the eggs, letting any uncooked parts run to the bottom to cook further. Let cook for another minute or two until egg mixture is completely set.

Sprinkle cheese on one side of the omelet and gently fold the near half on top of the far half. (It helps to tip the pan away from you so the omelet rests in the curve of the pan). Cook for another minute or so, flipping once until omelet begins to take on a golden brown shade.

Variation: We sometimes add a spicy Italian sausage to the omelet, but you can leave that out. The range of measurements in the recipe depends on if you use sausage or not. Use the 1/4 cup fewer vegetables if you use sausage, and add it to the pan after the tomatoes.

A great recipe for using up all that zucchini! Gardens are fun to fantasize about and to plant and then mid summer hits. This summer it has been so hot and dry that some of our veggies aren’t doing so great. But the ones that are are delicious. Then there is the rabbits and deer . . .

I am with you. I wish I had a garden. Better yet, I wish I had a garden and someone with a green thumb to tend to it. :) My one sadness about leaving my former school is not being able to hop into the garden to grab the cabbage, beans and tomatoes.

This omelet looks perfect. Love its garden freshness. Can you swing by and show me how to flip without breaking the omelet? :)

Those pesky squirrels! I remember it well. And raccoons. I think my gardening days are over, so it’s not a problem anymore. :)

we actually just had omelets for breakfast, using mostly ingredients that came from our backyard garden. i had an egg white omelet with our tomatoes + basil, local cheddar + a little pulled chicken. it was wonderful! i love zucchini in omelets, too + the rest of your ingredients look awesome. will have to try it!

Dastardly squirrels! They love eating my tulips in the spring but they honestly leave my veggies alone! I’d try some bush-style tomatoes in those pots next year. I am growing one called Tumbling Tom this year that is absolutely loaded with lovely green tomatoes and has already given me a couple dozen lovely ripe ones.

What a delicious omelette – almost like a frittata with the zucchini – love it!

Huh, I’d never thought of putting it in an omelet! My parents have a garden as well, and I’m jealous of all their bounteous produce. Though it may be a lot for two people, they get a lot of help from their dogs, who love to clandestinely steal tomatoes. ;-)

I only grow chillis and herbs in pots on my roof terrace but I’m with you, I want more!! This omelette sounds like a great Sunday brunch, I might add some Feta instead of the sausage, thanks!

Wish I could serve this zucchini omelet for dinner, this morning. Sounds and looks hearty, healthy and delicious!

I enjoyed your line about “being angry at God’s creatures” regarding having a garden. It happens…they don’t want to peacefully coexist and many a times you’re buying “critter” food. We have so many wild rabbits, ground squirrels, and gophers (to name a few) that the aggravation isn’t worth it. My herbs are planted in wine barrels and placed in an area that is constantly patrolled by our Corgis. All is good… :)

If I had a garden I might do the same thing. Oh wait, I have a garden. But the squirrels had a blast with tomatoes and the zucchini really was a bit much so now I’m doing herbs, all herbs. I get zucchini from my neighbors though and one thing I always do? I shred some now to freeze for baking later. As much as I love making zucchini bread with fresh zucchini, I think I love even more having several bags pre-measured in the freezer for making zucchini bread for holiday gifts. Now that’s when I miss the abundance of a garden1

Squirrels don’t have a chance to eat my garden- the deer beat them to it. It’s good that you have a good source for fresh veggies though. This omelet with zucchini looks really yummy! :)

Zucchini is definitely one of my favorite parts of summer. We grow HUGE ones in our garden! I generally just eat them with butter or in a quick bread, but I seriously need to expand my options!

I’m in just the same boat as you. The only time I planted veggies (mostly tomato) they were all destroyed by worms. Very sad. Now, I only plant herbs in containers.

I live in the desert, which makes garden growing ridiculously impossible. I tried to plant zucchini this year and they completely dried up. I think they’re worth buying at the store to try in this recipe though! Sounds delicious :)

Maris…I don’t have a garden either. I have a little bit of space for tomatoes or cukes. But there are these adorable little bunnies that like to visit my yard. So the best I can do is plant herbs in pots on my deck! Your omelet looks perfect! I love zucchini and the addition of sausage makes it a great meal for dinner, too! Just perfect! : )
