Top 5 Healthy Meal Ideas For An RV Road Trip

One of the trickier aspects of going on an RV vacation is keeping yourself loyal to a healthy diet.

During any vacation, it can be difficult making sure you eat healthy, and the opportunity to eat junk food or other unhealthy food items becomes even more tempting. However, if you’re driving in Iceland or other similar places, finding sources for healthy food may not be as easy as it seems.

Fortunately, the good news is that there are a huge variety of healthy meals that will be easy to pack for and prepare during an RV trip, and we’re going to talk about five of those meals here.

Here are five healthy meal ideas for an RV road trip:

Almond, Apple, and Cheddar Sandwich

This is an extremely trip-friendly sandwich that even kids should enjoy just as much as adults.

Take two pieces of bread and make a sandwich out of sliced apples, cheddar cheese, almond butter, and your deli meat of choice (most people seem to prefer ham). Or if you’re a vegetarian or a vegan, you can always decline to include the meat too.

Slice the sandwich in half and wrap each half in plastic wrap, and then store away in a cooler or refrigerator in your RV.

Chicken Salad Sandwich

For this sandwich, simply use summer tomatoes, green lettuce, and white chicken meat in between thick loaves of whole grain bread. You can further enhance the flavor with any additional spices or herbs of your choosing. Like the almond, apple, and cheddar sandwich, it is very trip friendly and is best kept in plastic wrap before being stored away in a cooler or fridge.

Egg Salad Sandwich

This one is a bit of a twist on the classic egg sandwich. Simply make scrambled eggs and then squish them in between two loaves of bread, in addition to chopped celery, avocados, and sunflower seeds if you so desire. While it’s a bit messier than the last two sandwiches we looked at, it’s still very delicious.

Hummus Veggie Wrap

This is an excellent road trip meal to make if you’re a vegetarian. Simply choose any veggies that you would like, and then cover the inside of flatbread with hummus. Place the veggies over the hummus on the flat bread and then wrap it up.

TIP: including roasted bell peppers as part of the ingredients adds a lot of flavor to this meal (though be warned, it also makes it spicy).

Roast Beef Watercress Sandwich

This is a simple road trip meal to make if you have a lot of deli meat you would like to eat up. Simply press slices of roast beef and some watercress slaw in between two loaves of bread, before wrapping in plastic wrap and storing in a cooler or fridge. You can also add mayonnaise to the bread beforehand if you would like.
